Wisemen used to say that to obtain a good olive oil it is necessary to grind within the day. We have improved this method, as we grind the olives within a few hours of harvesting.

The De Carlo Company strongly promotes a company policy based on the advantages of short supply chain, as it allows producers and consumers to pursue a common goal: the products quality. Together, we create a relationship of trust based on the respect of the territory and the safeguard of the environment and our health. Our ancient estates, in fact, are all located in Bitritto area, where the oil mill is located too.

Product Care

We harvest the olives before the full ripening to preserve their health benefits and process them within just a few hours of picking, ensuring unique flavors and aromas for the consumer.

A season of good news. For the prestigious Gambero Rosso 2024 Italian Oils Guide, De Carlo received three awards featuring: PGI Puglia Olive Oil with three green leaves, Torre di Mossa with two red leaves, and Peranzana with two green leaves. Ogliarola Barese

Ogliarola Barese is a typical Apulian cultivar, also known as “Paesana” or “Cima di Bitonto”. It spreads in the central part of ​​the province of Bari and it is mainly harvested by hand.

From this particular variety of olives, very appreciated since long time, we obtain a delicate and fine extra virgin olive oil, characterised by a fruity aroma of almond, a soft spiciness and a bright green colour.

Coratina

It is a cultivar characterised by the high value of polyphenols, natural antioxidants contained in a good extra-virgin olive oil.

The distinctive features of a monocultivar Coratina extra-virgin olive oil are its intense fruitiness and its bitter and spicy taste.

Favolosa e Peranzana

Also known as FS-17, the cultivar Favolosa is characterised by tones of fresh almond and flowers. It is an elegant and fine oil, characterised by a delicate fruity with almost imperceptible bitterness and soft spiciness.

This oil is suggested for those who are always looking for balanced flavours and enchanting aromas, like our fields in bloom. Particularly appreciated for its medium fruity and delicate taste, this oil is characterised by well-balanced bitter and spicy.
